Baked Chocolate Custard Pudding Cups

2 cups (500 mL) 35% cream
1 cup (250 mL) milk
1 tsp (5 mL) pure vanilla extract
150g dark chocolate
2 whole eggs
3 egg yolks
1⁄2 cup (125 mL) sugar

Preheat oven to 300ºF (150ºC).
Pour the cream, milk, vanilla and chocolate into a saucepan over high heat stirring to melt the chocolate.
Cook until the mixture just comes to a boil. Remove from heat and set aside.
Place the eggs, yolks and sugar in a bowl and whisk until combined.
Gradually add the hot cream mixture to the egg mixture, whisking to combine.
Pour into 6 x 1 cup-capacity (250 ml) ramekins.
Place ramekins into a water bath.
Bake for 45 minutes or until set.
Remove from the water bath and allow to stand for 15 minutes before serving
