Chocolate Brownies with Coffee

Ok - you can’t taste the coffee, it’s just there to enhance and deepen the chocolate flavour.
Give ‘em a try.


⅓ cup (75 mL) cocoa powder
1½ tsp (7 mL) instant coffee (optional)
½ cup plus 2 Tbsp (155 mL) boiling water
2 ounces (55g) unsweetened chocolate , finely chopped
¼ cup (60 mL) unsalted butter , melted
½ cup plus 2 Tbsp (155 mL) vegetable oil
2 large eggs
2 large egg yolks
2 tsp (10 mL) pure vanilla extract
2½ cup (625 mL) sugar
1¾ cup (425 mL) all-purpose flour
¾ tsp (3 mL) table salt

Pre-Heat oven to 350ºF (180ºC).
Whisk cocoa, instant coffee and boiling water together until smooth.
Add unsweetened chocolate and whisk until melted.
Whisk in melted butter and oil.
Add eggs, yolks, and vanilla; continue whisking until smooth.
Whisk in sugar until fully incorporated.
Add flour and salt and mix in with spatula until combined.
Scrape into buttered brownie pan and bake 30-35 minutes.
