Coffee Panna Cotta

MMMM... bet you can't eat just one of these great desserts.


1/3 cup (75 mL) 2% milk
1 envelope unflavoured gelatine
2½ cups (625 mL) heavy cream (35%)
½ cup (125 mL) white sugar
1½ tsp (7 mL) pure vanilla extract
2 Tbsp (30 mL) instant coffee

Pour milk into a small bowl and stir in the gelatine powder.
Set aside.
In a saucepan, stir together the heavy cream, and sugar.
Set over medium heat and bring to a boil. Watch carefully because the cream could boil over.
Stir in the instant coffee
Pour the gelatine / milk mixture into the boiling cream. Stir and cook 1 minute more.
Remove from the heat and stir in vanilla. Strain into serving dishes and cool uncovered to room temp.
Cover and refrigerate for at least 4 hours before serving.

Maybe shave some dark chocolate over top for garnish?
