Molten Chocolate 'Lava' Cake

We love dessert, but when it's just the two of us a whole cake or pan of brownies is just too much.
Enter this great recipe that only produces two portions. Depending on how long you cook these the texture will vary from a molten lava interior, to something very cake like.


4 Tbsp (60 mL) unsalted butter, + a bit more for the ramekins
2 tsp (10 mL) unsweetened cocoa, to dust the buttered ramekins
2 oz bittersweet chocolate (in the end use a quality chocolate that you like)
1 large egg
1 large egg yolk
1/3 cup (75 mL) fruit sugar (this is a super-fine quick dissolving sugar)
1/3 cup (75 mL) all purpose flour

Pre-Heat oven to 325ºF (160ºC)
Butter two large ramekins (3") and then dust with cocoa.
Melt the chocolate and butter.
Whisk together egg, egg yolk, and sugar. Continue whisking until pale yellow.
Temper egg mixture with the chocolate / butter mixture, and then fully incorporate chocolate.
Gently fold in flour.
Divide mixture between ramekins.
Bake for 12-14 minutes.

Serve immediately.
