Straight Up BBQ Sauce

Looking for a bold straight ahead basic BBQ sauce to baste your favourite grilled meat?
Well this is it!


2 Tbsp (30 mL) bacon grease
1 onion chopped
1 tablespoon garlic, minced
1⁄4 cup (60 mL) brown sugar
1⁄4 cup (60 mL) sugar
1⁄4 cup (60 mL) molasses
2 cups (500 mL) chicken stock
1 quart (1L) ketchup**
1 1⁄2 Tbsp (22 mL) black pepper,
1⁄4 tsp (1 mL) cayenne pepper
2 Tbsp (30 mL) dry mustard
2 Tbsp (30 mL) lemon juice (about 1 lemon)
1⁄4 cup (60 mL) Worcestershire sauce
1⁄2  cup (125 mL) balsamic vinegar
1⁄2  cup (125 mL) cider vinegar

Makes: 750 mL


Preheat oven to 300ºF. (150ºC)
In a 3-quart Dutch oven, heat the bacon grease over low heat.
Add the dehydrated onion and garlic and cook for 3 to 4 minutes.
Stir in the remaining ingredients and place the sauce in the oven.
Bake for 2 hours, stirring every 15 minutes.
Store in an airtight container in the refrigerator.
