Warm Black Bean Dip

Warm Black Bean Dip

Superbowl party favourite!!! Serve this with warm chips - or call it a side dish at your next BBQ!

Ingredients: 

4 bacon strips, diced
¼ cup (60 mL) each chopped onion, sweet red and green pepper
2 garlic cloves, minced
2 cans (15 ounces each) black beans, rinsed and drained
⅔ cup (150 mL) Frank's Red Hot sauce
2 tablespoons (30 mL) lime juice
2 teaspoons (30 mL) minced chipotle pepper in adobo sauce
1 teaspoon (5 mL) ground cumin
½ teaspoon (2 mL) salt
2 tablespoons (30 mL) minced fresh cilantro

Serves: 4

Method: 

In a large skillet, cook bacon over medium heat until crisp.
Remove to paper towels; drain, reserving 2 teaspoons bacon fat.
Sauté onion and peppers in the beacon fat until tender.
Add garlic and sauté another minute.
Add one can of beans and mash everything.
Add the Red Hot sauce, lime juice, chipotle peppers, cumin, salt and remaining beans and heat through.
Stir in bacon and cilantro just before serving.
