Apple, Cinnamon and Ginger Cake
This Apple and Ginger Cake Recipe is so moist and delicious!
Ingredients:
  • ¾ cup (175 mL) butter, at room temperature
  • 1 cup (250 mL) brown sugar
  • 3 eggs
  • 1 cup (250 mL) all purpose flour
  • 1 Tbsp (15 mL) baking powder
  • 1 tsp (5 mL) ground cinnamon
  • 1 1/2 tsp (7 mL) ground ginger
  • zest from 1 lemon
  • 3 apples
  • 1 Tbsp (15 mL) Demerara sugar
Method:
Preheat oven to 350ºF (180ºC). Grease and line a 8x8” baking pan.Mix together flour, baking powder and spices.Cream together butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Fold dry into butter mixture, add lemon zest, and 1 chopped apple and mix into batter.Fill prepared pan, smoothing top with a spatula. Bake for 10 mins. Remove from oven, and arrange sliced apples over batter. Sprinkle with demerara sugar, and bake for another 20-25 mins, or until a skewer inserted comes out clean. Cool in pan.
