Ginger Syrup for Ginger Ale

  • 1 tsp (5 mL) peppercorns
  • 3 star anise pods
Method:
In a pot, combine the water, sugars, and ginger. Toast the whole spices in a ‘dry’ pan until they just begin to become fragrant. Add the spices to the sugar and water mixture and bring it to a simmer. Simmer for about 15 minutes and then turn off the heat.Allow mixture to steep until cool; then strain into a sealable container and store it in the refrigeratorDry out the slices of ginger… and eat them like candy.2 Tbsp (30 mL) of syrup with 12 oz soda water and some ice makes a very refreshing glass of ginger ale.
