Now - are you going to use smooth or crunchy peanut butter? We usually use crunchy 'peanuts only' peanut butter in our cookies.
Peanut Butter Cookies
Caution - this recipe contains peanuts.
- ½ cup (125 mL) butter
- ½ cup (125 mL) granulated sugar
- ½ cup (125 mL) brown sugar
- 1 egg
- ½ tsp (2 mL) pure vanilla extract
- ½ cup (125 mL) peanut butter
- 1½ cup (375 mL) cake and pastry flour
- ½ tsp (2 mL) baking soda
- ¼ tsp (1 mL) salt
Preheat oven to 350ºF (180ºC).In bowl, cream together butter & sugars until fluffy.1 at a time; beat in egg, vanilla, and peanut butter.Whisk together flour, baking soda and salt; stir into butter mixture. Chill for 30 minutes.Drop by rounded 1 Tbsp onto baking sheets, and squish with a fork.Bake in 350°F (180°C) oven until edges are golden, 10-12 minutes.Let cool on baking pan on a cooling rack for 5 minutes; then transfer to racks and cool completely.
