Caution - Don't make these! This spiced sugar almond recipe is highly addictive...

Almonds  - or substitute any nut - baked with sugar and spice are the perfect snack for a party or the big game. 

This is another 'recipe' that's really just a 'method' - just keep the proportions and sub in any nut or mix of nuts, or swap out the spices and make them savoury, or spicy, or riff on the 'sweet' spices we use here.

Spiced Sugar Almonds

Ingredients:
  • 4 cups (625g) whole blanched almonds
  • 1 large egg white
  • 1 Tbsp (15 mL) pure vanilla extract
  • ½ cup (95g) granulated sugar
  • ½ cup (125g) packed light brown sugar
  • 2 tsp (10 mL) ground cinnamon
  • 1/2 tsp (2 mL) ground ginger
  • ¼ tsp (1 mL) coarse salt
Method:
Preheat the oven to 250°F (120ºC)Grease the bottom of a sheet pan.Mix together the granulated sugar, brown sugar, cinnamon and salt. In another bowl whisk the egg white until frothy.Add the vanilla and continue to whisk until combined.Add the almonds and stir until evenly coated. Mix the egg white coated almonds into the sugar mixture until fully coated.Spread in a single layer on the greased pan.Bake for 1 hour stirring every 15 minutes to prevent clumps.Cool before serving.
